I've created a polygon on the solder side of my 2-sided board. How do I
connect to it from the component side? My board is completely routed, so I
can't use a net. Do I just punch through with a via? Thanks.

Yes, you use vias. But first, as suggested, you should probably name your
polygon something (often GND). Then you can attach to it with a named via:
via 'gnd'
