I am using the SparkFun 1x16 header strip, and I would like to be able to lable the pins for the connector to show how they all link up to the LCD I am going to attach to it. How do I do this?

Usually in a library one names the pins of a symbol with a function name
and the package pads with numbers from 1 to x. In the device dialog one
connects the pin names of the symbol with the pad names of the package.
This way the same package can be used for many different devices.
However if you want it your way I suggest you create a new package, name
it accordingly and use the NAME command also to change the pad numbers.

I add short NET spurs to each connector/header pin and then use NAME and
LABEL XREF to accomplish this.
It should be EASIER, but I don't know any other way with EAGLE.
