Are you looking at the image file with a viewer that shows 300dpi, or a
viewer that shows pixel-per-pixel? (Ditto if you're printing).
Many many image viewers are quite sloppy about zooming to the extent
specified in the image file, and many cameras and image manipulation
programs are sloppy about maintaining the scaling.
See if your viewer has a "true scale" or a "1:1" setting.
