I am in the process of completing a new design that will use a hatched ground plane on the top of the PCB to protect cap touch traces on the back of the board. The issue that I am running into is direction of the hatch. All of the hatch traces run north and south on the board and I need them to run at 45 degrees, or cross hatch style. How can this be done?

AFAIK, the direction is fixed.
You could complete your design, then make a 45° rotated copy of your
board, and generate the CAM data from that. Might be interesting for
your board house, though... 
But I think they can deal with that.
