it seems that unfortunately the Eagle vector font is missing a copyright
sign - how is that even possible?
As you've found, the vector font does not include all ASCII characters.
In the past I would manually create the copyright symbol with a circle
around a 'c'.
Any chance to add this to the set? The other fonts still seem to be
ignored/converted to vector when output as gerber files, resulting in a
loss of glyphs again...
Only vector fonts get replicated in gerber output. I found that
proportional fonts work well for documentation and schematics as they are
searchable in PDF output.
As an alternative to vector fonts, and as a result of "font envy" of
boards designed with Protel/Altium/Allegro/etc, I developed a ULP
implementation of Hershey stroke fonts and I included some extra
symbols. See for example:

I have an idea about some enhancements to add more characters and a ULP
tool for easily creating your own symbols, and some of the Eagle users
have made suggestions that I haven't had time to implement.
This ULP renders the text as line segments that are copied into gerbers.
It is not ideal, and I had hoped it might be inspiration for CADSOFT to
embed more stroke fonts in EAGLE. Now that Autodesk, the home of shp
font files for CAD, owns EAGLE I hope this might happen soon.
