Is it possible to see components in the schematics but not in the board (like potentiometers)
Do you mean if you can see the components in the schematic view and the the board view?
If so yes you can, and you can have potentiometers 
If not im not catching your drift
So you want the potentiometer for testing on the schematic and not on the board?
If so you can create the board when the potentiometer not on there and then place it on the schematic, board and schematic files are not connected, only if you use the board creation button 
if you dont convert your schematic to board no the components wont follow, just to be sure you can move your board file away from the original folder
