Is it possible to make a extension mod to allow for a controller to be hook with a second mod port for the projector mod so that you could use an emulator on the phone and project the screen to the wall for a full entertainment experience

    Sorry, Moto Mods do not support stacking.  With the high speed interfaces, you would have great difficulty with signal integrity even if they were simply passed directly through pin-to-pin.

    You could build your own product that contains the gamepad and a pico projector, I'm not sure how you would modify the commercial Projector Mod.  Given the gaming use case, I suspect you'd want a battery in your product as well.
