I was curious, what is a good project for RPI beginners?

Adafruit has a series of tutorials for raspi at http://learn.adafruit.com/category/raspberry-pi
That should get you started!
Many people have recommended The MagPi magazine as a great way to get started: http://www.themagpi.com/
Tony, I'd second Adafruit. also check out Lifehacker and Hackaday for some projects.
Personally, I'm not sure the Magpi Magazine will be a great deal of help, but that is only my opinion !
Also take a look at some of the books available, the one the Foundation produces is OK, i'd also look at the 'Haynes' Raspberry Pi manual as that covers a lot of things and also Python Programming on the Pi by Simon Monk.

Well probably just understanding some programming languages and doing various projects stemming from that. I was looking into Arduino and various microcontrollers, everything looks very interestin but also challenging!

I have been looking at the python section of codeacademy.com and I have found some great tutorials on that site so far they give a great you a great understanding and this really helps as python is a highly powerful and easy to learn code.
