Previous versions of the Pi had built-in audio output sockets. Is it possible to add this back on the Pi 5?

I haven't seen the full possibilities via the GPIO pins, so I would hesitate to suggest that it may be broken out to it via a pinmux, unfortunately, there's no location on the Pi 5 to solder or mount a 3.5mm audio jack socket or similar.
You will have to use a Raspberry Pi HAT that supports audio, or a USB audio DAC / sound card.
