It would be cool to hack a Kinetic camera combine it with a Raspberry PI and a cheap projector to creat a smart/interactive whiteboard/screen. With touch screen like functionality, draw over presentations or pictures. It would also be a good platform to create educational games for kids. I know is possible to do with a windows 7 computer but not sure about the RPI.
