If I had the time, I would design an e-bike motor controller to test this beast.

Depends, if the motor had its own controller, you could use canbus and hook the control lines to the header on the board (e.g. in automotive/elevator applications). A raw motor would need its own driver…

The data sheet says it has a PMOD interface, so just use a PMOD BLDC motor driver plugin

Depends, if the motor had its own controller, you could use canbus and hook the control lines to the header on the board (e.g. in automotive/elevator applications). A raw motor would need its own driver, in which case, maybe via a shield. But not too much experience with this myself.

That board reminds me a bit of the Edison boards.

Depending on the availability and the goal (just for fun? a design for a client? etc), an ESC, a custom driver, or a driver shield would all be options, in my opinion.

Using a motor driver shield feels way safer from the hobbyist point of view.
Much less risk of frying the MCU if there's some sort of "buffer" in between

There is no motor interface, that is mention on the datasheet. I would rather go for motor specific boards that has more motor control features in it. The datasheet gives a circuit for separate motor control drive. Please provide us with that same drive to test this board for motor control. And a 3 phase motor as well.
