It depends on application. MOC3081-MMOC3081-M is intended for on/off switching of load and MOC3052 can also be used for e.g. dimming. MOC3081 with zero crossing circuit switches on when voltage is rising from zero, so it can switch on load generating low noise, but cannot be used when phase control is needed. MOC3052 can swich on load at different phases, so it can be used in dimmer, motor speed control etc.
Additionally MOC3081-MMOC3081-M has higher LED trigger current (15mA) than MOC3052 (10mA).
