Hi,
Some engineer should be looking at your circuit to make this decision, and some testing would be required. I don't think it is safe to assume it will work, although there's a very good chance it will. No-one knows if your circuit is operating the device at the edge of margins for instance, and there are small differences which might not affect anything at all, but it is impossible for anyone to tell, unless they examined your circuit, and ran tests.
There are some parameters differences between these two ICs. For example the M variant has more insulation voltage than other (5kV vs 2.5kV). Even M variant has faster response I guess. As M variant has better response I think you can replace HCPL2631SD with HCPL2631SDM.
