You can probably use instruments like Omega OS523E-LR or a Raytek RAYR3ILRSCU, but they can get expensive.
I did some fire sensing with a fairly inexpensive narrow band UV sensor to pick up a unique spectral line. I focused it with an aluminum reflector because lenses that will pass UV (or IR for that matter) can get very expensive. I did not try for distances beyond a few meters, but the sensor was pretty sensitive it would detect a candle about 10 meters away - perhaps a good aluminum parabolic dish would provide enough range.....
