This probably sounds like a very noobish question (mainly because I am a noob), but are there any uses of the SABRE Light i.MX6 Platform Development Kit other than pretty much just using it as a mini computer?

I'd say you're spot on. You do use it as a tiny computer. Take that in context though, use it in places where you don't have the space, power, cooling needed for a full size computer. Or where you need the sort of IO capabilities that a full sized PC rarely provides
There's an 'automotive' version on the chip (and that's what's on my Sabre-Lite) so you can see this sort of thing appearing in cars, perhaps running the dashboard display, or the headrest movie players for the kids in the back. Whether you'd use a SL for that or a custom designed board with the iMX6 SoC is a different matter.
The SL is as it's full title sugests a platform development kit the idea being to use it to prototype and prove an application before going to the expense of designing that custom board.
So you can use the SL for almost all of the things you can do with a big PC, but also for lots of things that you can't.
