We use polygons on ground and other planes but we want to shut them off when
routing manually as they can mask the board and make it hard to route when
they are on the top or bottom plane. Is there a simple way to turn them on
and off.

SET POLYGON OFF;
After that, RATSNEST won't calculate the polygons (until you turn it on
again). To also hide the related airwires, use "RATSNEST ! GND" (for
example).
Or, after RATSNEST and before routing, enter "RIPUP @;" which will
display all polygons as outlines only.
