Is uninstalling 5.10.0 necesary or can i overinstall 5.11 on 5.10 ?
what about the projects I already have ?

You can do that. Eagle asks you if you want to create backups.
I generally install into a new folder and adjust the paths of the
directories and my libraries . Then copy the current project to the new
version and continue work. If everything runs smooth I move all projects
over and uninstall the old eagle.
Generally I keep my backups up to date.

It is generally a good advice to strictly separate programs and data.
The libraries, projects etc. never belong in the path of the program
installation - even if that's the (unlucky) default after installation.
Move all your data to a complete different path, ideally at another
drive (I strongly second that suggestion made by Alfred Zaffran a few
days ago) or at least a separate root directory. Set the directory paths
in EAGLE accordingly.
After that, you can seamlessly update EAGLE any time, without moving or
correcting any data - regardless of using the same or another directory
for the program.
