I must be doing something obviously wrong, but all vias that I create have big X through them. Can't seem to figure out what to do to create a correct via. Any help would be great.

Hi
I'm guessing that, if you move the via, the big X will remain and is at
a point where two wires, with the same name, on different layers end. It
represents an airwire of zero length. i.e. from one layer to another
vertically.
In your situation I suspect the Vias need to be named so give them the
name of the routed traces that end at the X.
The manual covers generating named vias automatically as you route by
changing layers with the mouse scroll click centre button or alternately
Shift Click when you terminate a route at the same point as a wire of
the same name on a different layer.
Get into some tutorials and reduce your grief
