I am trying to edit a connector in the libary editor by removing pins not

Why are you removing pins? Surely the connector either has them or isn't
the same connector!
Anyway, the error message is saying that you can't do this to a "package"
that is already associated with a "device". I think that's because the
device may have allocated pins of its "symbol" to all the pads, so losing
a pad would break the device. Removing pins from symbols doesn't have
this restriction, because it merely results in the device having some
no-connect pads.
What you need to do is copy the package to a different name first, then
modify that. Then you should similarly copy and rename the symbol before
modifying it. And finally you create a new device that uses the modified
symbol and package.
