I am working on an Electronic Nose / gas sensing project using ESP32.
I want to know how many gas sensors can be connected to ESP32 and what are the limitations.

An ESP32 has up to 18 native A/D channels, but some pins would be needed for control, so you might get 8-14 analog sensors directly connected, depending on your control scheme. There are also lots of sensors…

There is no simple limit - the ESP32 supports standard interfaces like I2C and SPI and UART.

There may be physical imitations but your cash will probably run out first.

Why not explain what kind of sensors you mean to use and how many you would like to connect, and why you want to use an ESP32.
