There's a chance that's all it supports!
500 is a nice round number, so it's likely that's all the records the device can capture to a file. A lot of the old school data acquisition units had very limited memory, and would record to the internal memory, not the PC memory.. This product is more than a decade old.

The number of 500 samples is very small
According to the conducted research, the minimum number should be 20,000 to give a logical answer in signal processing
This device has the ability to record 1000 samples per second according to its catalog

In the demo mode, the number of samples is 4000

There are 8 channels, and 4000 divided by 8 is exactly 500, which is what you're seeing. The device has 4k of sample memory. Where do you see the reference to 20000?
You could try adjusting the interval time in the red box, in case it streams the data indefinitely under some circumstances.
I said 20,000 as an example.
I did not see this number with this data logger, but by chance I saw 3000 once with 1008( i just cant remember what i did)
Regarding the 4000 in the demo mode that you said, each channel gives this number, so there is no need to divide
Regarding the red box: as you can see, that option is inactive for me and I don't want the drc file , it must be CSV so that I can use it in the Excel environment.
