Use the DELETE tool and click on the arrow points. There is another point.
You should read the HELP to understand where this will be located, as it
varies.

The dimensions do not snap to other objects and thus are independant of
other objects.
Do some tests and you will see that dimensions snap to the grid so the grid
needs to be fine enough when dimensioning so errors are not introduced.

No, that does not work (both).
But, if the measured object is moved or deletet - then the dimension can be deleted on the outermost pixel (common with the object).
Seems to me as a bug - because what you and the manual describe does not work.

It does work for me with Windows and using Eagle beta 6.2.2
Which Windows/Mac/Linux are you using. That my be relevant.
Consider downloading the latest beta and see if all is well then.
There are only three places you can click to delete the dimension object.
Ensure you understand how to select the object you require. See HELP

This is not true. The first point does snap to some objects as the HELP
(beta 6.2.2 ) suggests
beta 6.2.3 adds more functionality
- Some extensions to the DIMENSION command:
- Selection of rectangles and origins of elements or parts.
- Snap to objects on defining the second dimension point.
To have the dimensions move with the object, you can group the object and
the dimension points and move them as a set. If you group the object and one
end of the dimension then the text value will adjust to the new distance.

EAGLE is a CAD (well, should be) but it doesn't have a lot of common
features of standard CAD softwares.
